This is the nickname of my family, the còle or those who come from the hills. Colè represents our first sparkling wine, our pleasure and our taste for being with the family: strong acidity and dryness in the mouth, hints of citrus and the sulfuric volcanic on the nose (in particular a presence of pink grapefruit.). Gruaja is its varietal, red berried grape that never reaches full maturity because some berries remain green. Cultivated only in Breganze, today it risks disappearing. It was always vinified in red but during the experiments we discovered what it is made of and therefore we press it a little, we immediately separate the must from the skins and prepare the base which will then referment with its own must in the bottle. Wine that can be called thirst-quenching.
